The new menu by Chef Mariana Campos D’ Almeida is full of surprises. In a nutshell, I really love it. I have been to The Butcher’s Wife numerous time since it first started, I felt the food is getting better under the helm of each new chef.

Chef Mariana Campos D’ Almeida is Brazil-born, Paris-trained after graduated from the prestigious Institut Paul Bocuse in Lyon, France. That’s explain a lot about her style and dishes.

New Menu By Chef Mariana Campos D’ Almeida

In this new menu by Chef Mariana Campos D’ Almeida, there are so much of unexpected elements. What brilliant is that the Chef uses many of familar local ingredients in her dishes.

Snack

Beginning with Dadinhos de Sago with dragon fruit chutney ($11). These little cubes is made from a commonly found ingredients in our local dessert, sago. It was unexpected that sago is used in a savoury dish. I highly recommend this for a start.

Mini Corn on Fire, pecorino, smoked paprika & black garlic sauce ($10) is equally delicious. The smokiness complemented the sweetness which was amazing.

Diners can pair with an aromatic white wine, Laurent Cazottes – Adele 2018, with almond and acacia flowers and pear flavour.

Starter

Subsequently, choose a handful of starters. First was Our Own Goat Cheese ($17) drenched with raw honey & ”Oh My Goodness!” Buckwheat and Walnut bread. A simple delight.

Crispy Pig’s Ears ($21) with red dates sauce, pickled ginger flower & wild pepper leaves. I never imagined that someone would turned pig’s ears, an ingredient which will put a lot of diners off into a crispy delicious dish.

A suggested wine to go along with the starters is the Camin Larredya – Part Davant 2018, also a white. Filled with citrus, peach and mineral note.

Mains

It’s so smart of Chef to add the blue dye into the Blue Pea Flower Naan Sandwich​​ ($20). The entire combination elevated the flavour.

Sweet Potato Gnocchi ($22) mushrooms, pea shoots, rosemary butter & parmesan is a savoury dish with natural sweetness from the various different ingredients.

A light fruity red, Domaine Les Tete – Tete Red 2018 is a good one for the 2 mains. It is a very easy on the palate red.

The Grilled Octopus ($27) at The Butcher’s Wife is easily one of the best, tender and tasty. Accompanied with manioc puree, white kimchi & grilled broccolin.

For the beef lover, don’t miss the Wagyu Picanha ($38) with burnt cauliflower puree, green papaya salsa & banana powder. Though some find it too rare.

Dominique Andiran – Magnus 2018, a medium body fruity red with aromatic berries, rustic hint of spice is great with the beef and octopus.

I would highly recommend the Banana Leaf Seabass ($29). By the side are the plantains puree, shrimp sambal & grilled lady fingers. The key side that made the dish highly tasty is the shrimp sambal. I thought it was a very smart add.

Dessert

End of with Lemongrass Panna Cotta ($13) is a must. Kalamansi curd & pineapple and the crispy roll was a perfect add to the gingerly aroma panna cotta. It not only added various dimension to the flavour but also texture.

Lastly, is the Warm Chocolate Cake ($14). At a glance, it is a boring dish. The surprise is the caramel-miso ice cream and pili nuts which has a white chocolate note.

A sweet fruity Camin Larredya – Costat Darrer ‘les Grains Des Copains 2017 to round up the meal with the dessert.

NAHMJ Verdict

It is rare that I enjoyed every dishes that I tried. I see myself going back to try out other dishes soon.

Yet another amazing restaurant rested at Marina Bay Financial Centre, LeVeL33 Craft-Brewery Restaurant & Lounge. The last one we visited was Forbidden Duck.

If you are looking for a restaurant with a view, LeVel33 is the restaurant. Overlooking the Marina Bay Sand, Flyer and the water body; the view on a sunny day is priceless.

Our Selection from the Menu of LeVeL33 Craft-Brewery

It was a lunch for my birthday celebration. I chose this as I am a sucker for restaurant with a view.

Begin the lunch Sea Urchin ($7) on a seaweed cracker. As sea urchin was out of stock, it was replaced with scallop. Fresh scallop with seaweed was refreshing.

Lightly-grilled Octopus ($25) that are a bit too chewy for my liking. Coupled with caramelised onion, not an ingredient I like as well. The consolation was that the dish was tasty.

We ordered a Ribeye ($44) with medium rare doneness. Disappointed as it was relatively tough even at this doneness. And lacking of seasoning, in particular salt.

Among our selection, we were surprised by this vegetarian item, Spent Grain Linguine ($28). Al dente and flavourful.

We got a side, Mushroom ($13). Nothing wow, but decent.

Rounding up the meal with 2 desserts. First is the LeVel 33’s Beer Ice Cream ($5.80), using stout with berry, the flavour was interesting and unique, very much an acquired taste. Second dessert was Purple Yam Mousse ($12). We find it too bland, it was the first time, I felt a dessert wasn’t sweet enough.

Overall, there are more misses than hits at LeVeL33 Craft-Brewery Restaurant & Lounge. It may not be worthwhile even with a scenic view.

Most of the restaurants at Dempsey is extremely inaccessible especially for those who don’t drive, however, RedDot Brewhouse @ Dempsey is on the contrary as it is a stone throw from the bus stop. In addition, if you are looking for a dog-friendly restaurant in Singapore, RedDot Brewhouse @ Dempsey is certainly one of them.

The restaurant offers both indoor and outdoor seats. However, when I stepped foot into the indoor area, I was quick to notice that it was non-airconditioned. I went “Oh No!” I was glad that though it was a hot and sunny day, I didn’t feel the heat.


At RedDot Brewhouse, they offered different menu catered for different timing of the day. We visited on a Sunday noon hence tried their Brunch and Lunch Menu.

RedDot Brewhouse @ Dempsey Brunch Menu Highlights

Egg Benedict ($18) is a common sight on Brunch Menu and it is certainly welcome. At RedDot, it is served with pulled pork and sausage.


Irresistible Smoked Salmon Guacamole Toast ($20) is yet another crowd-favourite. Who doesn’t like avocado?


Order the hearty Garden Breakfast ($19) for a complete meal since there are wholesome egg, bread, vegetables and sausages.


One of my favourite brunch item, which I didn’t get the chance to capture a photo is the Jamon Iberico Ham on Toast. It has a large omelette with ham on toast with arugula and cherry tomatoes on the side.

For something light, turn to the picturesque Smoked Salmon Salad ($18).


Pan Roasted Chicken Breast ($22) is a healthier and substantial item.


Alternatively, opt for the salubrious and yet tasty Salmon Fillet ($18).


Among the 2 pasta option, we opted for the RedDot Spicy Crab Meat Linguine ($22), the other is Spaghetti Beef Aglio Olio ($22). The former was pretty spicy dominated with capsicum flavour.

I love the ambience of RedDot Brewhouse @ Dempsey and especially when it is dog and children friendly. Even the menu caters to different needs.

Everything you hear is true, Rumours Bar & Grill @ Jewel Changi Airport is now opened. Serving their delicious bar grub and Western dishes to family and patrons at Singapore latest iconic architecture.

By the folks of Blue Waves Food Empire, one of the larger F&B group from Indonesia opened its second outpost at the Jewel Changi Aiport after their successful first at Holland Village.

Perched at level 5, where patrons dine under the star wind down and relax with drink and food.


From The Menu

Diners could choose the addictive Calamari ($8.80) and the crowd-favourite bar grub, Deep-fried Chicken Wings ($8.80) to kick-start the session.


Accompany the snack with amazing selection of cocktails. The first 2 that we recommend are gin-based; a highly citrusy Passionate Kiss ($18) and fruity Two Boyfriends ($18). Next is a drink worthy for a video, Blowing Smoke ($18), a floral cum smoky rum-based drink. If you prefer something with whiskey, opt for Inside Me ($18) consist of smoky whiskey ice-blended.


Alternatively, a medley of mocktail selections is also on the menu.


Beef lovers will be thrilled to know that they serve A5 Grade Kumamoto Wagyu Tenderloin ($87.80/200g).


I love the Rumours Classic Cheeseburger ($16.80). Patty comprises a mix of pork and beef with bacon. Anything with bacon somehow tasted extra delicious.


As I love lamb, I was extremely delighted to find the grill-to-perfection Australian Baby Lamb Chops with Garlic Confit ($45.80) on the menu.


If you are looking for a Main to share, order the Mixed Grill Platter ($48.80) to enjoy the best of all the grill.

We are back for Porta revamped ala carte menu. Though it isn’t our first visit, we hope it won’t be the last as well. From our first visit to Porta Fine Food & Company to various refreshed ala carte menu, our stomach are always feeling satisfied.

In this revamped ala carte menu, despite having new dishes, Porta has decided to keep some of the popular and signature items. And the one-page format remains unchanged too allowing ease of selection.




Porta Revamped Ala Carte Menu

Among the new items, we tried as much as we can, from appetisers to mains and finally desserts.

Appetisers

Beginning with tangy Spicy Salmon Tartare ($16). This is my favourite appetiser among the options we tried. Sriacha mayonnaise tossed among the diced salmon when eaten with the nori rice cracker for the best experience.


When the Chicken and Egg ($14) was served, the red ball that sat on the dish bedazzled me. It turned out to be a lava egg dyed with beetroot juice. Beneath the egg is a bed of shredded chicken and slaw tossed with sesame sauce. Nothing innovative but a dish that most would accept.


Many may not like lamb, however if you are a fan, don’t missed out on the
Confit Lamb Pastilla ($14), a Morrocan-inspired dish. Shredded lamb confit wrapped in feuilles de brick reminded me of the chinese spring roll.


Sole vegetarian option for appetiser is the Grilled Summer Vegetables with Hummus ($14). Chef enhances the hummus with more spices so as to provide a more rounded flavour.



Mains

Working into Mains, first and foremost is a dish inspired by the Duck Confit, Roast Chicken Leg ($24) served with red wine sauce. Even the way it was serve is easily mistaken for the classic French dish. Full of umami flavour. I was impressed that the usual thick layer of fats underneath the skin was absent. My favourite among all the Mains we tried.


The next two dishes are tomato-based which are not my kind of food. First is the improvised version of the signature dish, the Duck Ragout ($24). I have not tried the previous version hence no ground of comparison. In my opinion, it is a typical tomato-based past with meat (duck) on pappardelle pasta.


Yet another tomato dish, Barramundi ($24). Under the grilled fish (from Ah Hua Kelong) is ratatouille, studded with mussels. A comfort dish.



Desserts

Commencing with a sour dish, Key Lime Meringue ($12). The name of the dish is a little misleading as the ingredient used in this de-constructed form is not key lime but kaffir lime in the pannacotta and jelly, served with meringue and vanilla sable crumble. Lightly savour with aroma from the lime and well balance sweet and sour scent.


It was brilliant to serve the Spiced Apple Tarte Tartin ($14) with Rum & raisin ice cream instead of plain vanilla ice cream. An unusual element, bacon was added. I thought it was the rum that masterfully binds the savoury from bacon and spice flavour together. A well-executed dish.


Lastly, a highly recommended dessert and personal favourite, Black Forest ($14). The chocolate lava cake was baked using 75% Filipino Dark Malagos chocolate. To resemble the classic cake, Marachino cherries were added. It was enhanced with cinnamon, juniper berries and star anise which I felt was unnecessary. To intensify the flavour further, crystaline cocoa nibs were included. Finally, the key was the coconut whipped cream to be eaten together with the cake that differentiated itself altogether. Smitten totally by this creative dish.



Brunch Menu

Here is the bonus, 2 items from the Brunch Menu. First is the vegetarian dish, Breakfast Burg ($18), sandwiched between the Brioche bun with juicy portobello mushroom, sauteed baby spinach, tomato and sunny side-up. A simple and full of nutrition dish.


Should you prefer something sweet for brunch, opt for the French Toast ($16). The look suggested it as an ordinary thick Brioche Toast. Once you dig in, you will realize the difference due to the layer of caramlised sugar on the brioche. A delightful item.



NAHMJ Verdict

We walked away from Park Hotel Clarke full of praise for Porta revamped ala carte menu. Surely back for the Spicy Salmon Tartare, Roast Chicken Leg, Spiced Apple Tarte Tartin and Black Forest.

Ankimo

The first course, Monkfish Liver, labelled as foie gras of the sea was with carrot gel, Yarra Valley trout roe. Among the components, there was vinegar to cut through the pungent fishy flavour. It is a delicacy targeted only for the adventurous, certainly not for a faint-hearted.

Sourdough

I am not a fan of sourdough but enjoyed this one. Soft chewiness is the characteristic of such rustic bread and what I really like about it is the extremely light sourish flavour.

Smoked Trout

Instead of the usual salmon, here Trout was used. The smoother texture from trout with dill on pancake gave a different dimension to the dish. Overall, a simple but delightful item.

Oxtail Bomba Rice

Some love this Braised oxtail, confit quail egg yolk, chive aioli with rice. I didn’t enjoy entirely as it was too sweet for my preference.

Pork

Chewy Pork Neck with Apple and Mustard are such wonderful combination.

Beef Tongue

Before moving to the dessert, the last savoury course was the Beef Tongue, another item with good chewiness. Flavoured with vegetable glaze, thyme oil, forest berries

Chocolate

Round off the meal with a chocolate dessert comprises chocolate sponge, chocolate ice cream and chocolate meringue. The intensity of the chocolate in the 3 elements were different too, lightest was the meringue and strongest from the ice cream.

NAHMJ Verdict

The 100 Gourment March 2019 Edition by Aitor Jeronimo Orive x Chef Oldrich Sahajdak was a memorable dinner with unexpected combination of ingredients.

Cream of tomato with a hint of red bell pepper, served with warm garlic toast

 

If you are fan of soups, or rather, tomato soup, this is your choice! its a rich and creamy blend of tomato, sweet and sour finely tuned to taste.

Best paired with warm garlic toast! A definite great choice for an appetizer or starter to your meal. However serving size was abit too little. for the price, we would prefer a larger serving size for one person. Maybe because it was too yummy we are craving for more!

Marinated cubes with house made chili sauce and soy, fried onion crackers on the side

 

Fresh Salmon, chilli sauce was not too spicy and it is tolerable for non-spicy tastebuds, soy was marinated well with the sauce and salmon. Not too salty as well. Seasoning was just right.

To spice things up, enjoy the fried crackers as you devour the Salmon Poké.

Buttermilk Fried Chicken – S$ 13

Cornmeal crusted, served with sweet potato mash and succotash

 

A great sharing dish and our favorite from the menu. Golden brown, fresh from the fryer. Crispy fried chicken went really well with the mix of sweet potato mash (instead of the usual mash potato) and succotash. A really nice invention and delicious as well. Simply can’t stop as it’s pretty addictive. A great dish for sharing as you chit chat through the night with some drinks to go with.

 

 

 

Apple Walnut Cake S$ 10

Grandma’s recipe, served with salted caramel and brandy cream

 

Apple walnut cake was good, soft and was not too overwhelming with the brandy cream. However the brandy cream felt like whip cream and thus not for those who does not like whip cream. Would be good if they paired this with ice cream as well. Maybe say vanilla ice cream drizzled with salted caramel could be a better combination.

 

 

 

Caramelised Banana Cake S$ 10

Served with toasted barley ice cream and white chocolate

 

Barley ice cream; but it tasted like vanilla. Probably because the taste of barley was not strong enough. Nonetheless, you can’t go wrong with ice cream! This was our favorite dessert choice. Soft, spongy and freshly baked banana cake. Combined with the ice cream and white chocolate shavings creating a melt in your mouth sensation. Value for money and definitely worth the calories and saving your tummy for!

Specially concocted and taste perfect. Not the usual classic that is so common at every bar, they have a wide selection of interesting cocktails made from many different ingredients with taste ranging from bittersweets, sours,  tropical & timeless.

Insights

Rack of Lamb from the Grill

Grilled perfectly yet meat was still soft and tender. The grilled Australian rack of lamb was seasoned well with a special blend of herbs and spices. Making the meal complete with crisp vegetables (carrot, maize and green long beans), baked potato with creamy ranch sauce with a refreshing mint taste. However we would prefer the baked potato was served with butter instead to make it more flavourful. Vegetables were quite bland as well. It would have been better if they were seasoned with the grill lamb.

Cod Fillet with Mushroom Risotto

This was an impressive dish. The cod was fresh – moist and tender to taste. Nicely pan-fried and it complemented the homemade capsicum sauce really well. Cod’s Skin was crisp as well. Underneath the cod were a bed of risotto with shimeji mushrooms. Every bite was a pleasure. The risotto was soft and it has a rich mushroom flavour. It was a delightful dish. Serving size was great for small to medium eaters, and of course definitely a choice for seafood lovers.

Tapioca Patties

 

Consists of both hot and cold. Golden brown fried sweet tapioca patties accompanied by the pesto coloured pistachio gelato. 

 

 

Surfer’s Paradise

 

Cheese cookies and chocolate gelato sandwiched between mini donuts. Tthe donuts were dry and but it helps to complement the sweetness of the ice cream. Chocolate gelato was good. Rich and savoury.

Donut Castles

 

Donut Castles are catered for diners with sweet-tooth. Wild Strawberry and Chocolate gelato in the middle of mini donuts, served with potato crisps and strawberry topping. The potato crisps did not complement the donut castles well enough though and the wild strawberry ice cream with strawberry topping was overly sweet. Nevertheless, it was a nice gesture that the topping was served separately so that diners could choose how they would have them.

Probably, it would be good if they could offer a range of gelato flavours for diners to choose from to make the dish a unique one and to the guest’s own preference. However, the gelato were still a great way to end off the meal. Something we can’t do without whenever we dine at Earle Swensen’s!

 

 

NAHMJ Verdict

 

All in all, the newly curated dishes at Earle Swensen’s were a good addition to the existing menu and definitely worth a try! We love the cod fillet and the chocolate gelato. Buffet style salad bar offers a wide selection of appetizers, salads and fruits. You can have them before and after your meal as you wish!

The Loco Group is a Mexican restaurant and bar group serves contemporary Mexican food and its quality agave forward tequila curations. They opened three restaurants in the Island, located in custom house and Robertson Quay are named Super Loco which we visited previously, The last one is located in Duxton Hill is called Lucha Loco.  This is my first visit to the Super Loco Custom House. 

 

Elotes (Vegetarian) ($7) is one of the signature dishes. Barbecued corn on the cob, chipotle mayo, cotija cheese, lime and chili. I was told that it is an iconic Mexican street food.  The corn is juicy and sweet, cotja cheese gives another layer of the dimension.

Tostada de Atun ($15) Fried corn tortilla with fresh yellowfin tuna tartare, aguachile salsa, avocado, mint, coriander, serrano, radish. It is doused with generous lashings of smoky chipotle sauce, finely-diced shallots, and zesty lime juice, high-grade yellowfin tuna is the star of the Tostada de Atun. I really enjoyed the fiery aguachile salsa. It is so refreshing and complemented by a creamy avocado relish and crunchy radish garnish.

Taco de Cangrejo ($16) Buttermilk fried soft-shell crab, avocado, habanero slaw and lime

I was told that it is a new dish which is only available in Lucha Loco.  Soft shell crab gets a delectable makeover in Taco de Cangrejo. Enveloped in a crispy buttermilk casing, the crab is accompanied by a punchy habanero slaw, buttery avocado wedges, and fresh pickled onions. The soft shell crab is so fresh, my taste buds are whisked away by its fresh ocean flavors.

The one on the left is another new dish Pollo al pastor ($9) Vertical spit-roasted chicken paired with achiote, salsa verde, red cabbage, jalapeño and pineapple salsa

This dish is inspired by Al pastor, a classic taco typically cooked by street vendors in Mexico. Slices of marinated chicken cooked rotisserie-style are topped with a luscious pineapple salsa–the Pollo al pastor. I believe that this rotisserie chicken was done on a charcoal grill for that extra, smoky flavor.

Almejas ($16), Yucatan-style clams, jalapeño pico de gallo, smoked bacon, guajillo chilli

This signature dish has a strong European influences, it is the perfect combination of fresh clams served with crispy bacon and a hint of spicy guajillo chilli. Bravo!

Huitlacoche Quesadilla ($16)  10” wheat tortilla, corn truffle, oyster mushrooms, sweet corn, cotija, and chimichurri sauce 

Huitlacoche is possibly Mexico’s most fascinating ingredient. Like mushrooms, it grows on corn as a fungus yet boasts an earthy, almost truffle-like flavour. In the Huitlacoche Quesadilla, mushrooms, sweetcorn, and huitlacoche are braised, packed in a 10” flour tortilla with cheese, toasted on the plancha and topped with a fresh chimichurri sauce. This Mexican classic has been a mainstay on Lucha Loco’s menu since its inception.

Cordero Al Horno ($70) Tender slow-roasted lamb shoulder marinated in ancho and sherry, served with chargrilled cos, pistachio salsa verde and tortillas.

The sweetness of succulent slow-roasted lamb, combined with savoury ancho chili is a gastronomical marriage made in heaven. It is served with soft tortillas for guests to make their own tacos.

Wild Snapper Veracruzana ($28)  Red snapper, clams, tomato, caper, serrano, parsley, toasted seaweed oil.

The Spanish influence on the cuisine of Mexico’s Veracruz region is indubitable. With tomatoes, capers, and wine as a base, the Wild Snapper Veracruzana is infused with chilli and lime to tantalise the senses. However, it seemed that the red snapper was marinated for too long, and it became a bit too salty.

Watermelon Tres Leches ($14) Milk sponge, vanilla milk panna cotta, watermelon, almond, blueberries

The chef managed to transform this classic dessert into something light and refreshing. Fresh watermelon and sweet milk contrast wonderfully against the sharp, tangy bursts of flavour from the blueberries, making the Watermelon Tres Leches a crowd favourite.
