Coffee Ribs is sometimes found on Zichar places. Not extremely common though it is so delicious and addictive. I can’t stop at just one piece. I tried cooking this dish for a friend. This dish is strong in flavour, if you have a light palate, this might not be suitable for you.

Marinate Pork
400g Pork 400g
1 tbsp Oyster Sauce
1 tbsp Soya Sauce
1 tbsp Shaoxing or Rice Wine
2 tbsp Sesame Oil
3 tbsp Rice flour
2 tbsp Corn flour
1 tbsp Plain flour
1 Egg
¼ tsp Salt
¼ tsp Sugar
¼ tsp Five Spice Powder
Dashes Pepper
Sauce
2 sachets Instant Coffee Powder
2 tbsp White Sugar
1 tbsp Brown Sugar
2 tbsp Worcester Sauce
1 tbsp Oyster Sauce
2 tbsp Minced Garlic
1 tbsp Shaoxing or Rice Wine

Steps
- Add all the ingredients to marinate the pork and leave it in the fridge for at least 30min.
- For the sauce, mix all the ingredients well and set aside. If needed, add more water to ensure the coffee powder is dissolved.
- Bring out from the pork from the fridge about 30 min before deep-frying, mix in 2 tablespoon of corn flour. Once the pork is at room-temperature, deep-fry the pork and set aside.
- Heat the wok. Add about 1 tablespoon of oil. When oil is hot, add the pre-mix sauce into the wok. When oil, add the deep-fried pork.
