Craft Tea Fox specialises in Matcha and Houjicha products. How they started was purely due to their need for a non-alcoholic drink and they can’t find good selection at 7-Eleven. Hence, they decided to offer delicious yet healthy Matcha easy and accessible to a wider audience, in a way that is honest and environmentally sustainable.

I got hold of the barista-quality Uji Matcha and Uji Hojicha. Both are great for making your own tasty silky Tea Latte. Importantly, both are sugar-free which allows us to customise our preferred sugar level; this is important for me. Equally important is that both are preservative-free as well.
Both the Houjicha and Matcha are available in 20g and 100g.

Instead of using it for simply latte, I tried it in baking recipes and I find that it goes extremely well when the bake consist of diary item such as cheese. And since Burnt Cheesecake is such a hotcake item, here is the recipe for the Houjicha Matcha Marble Burnt Cheese cake
Houjicha Matcha Marble Burnt Cheese cake
Ingredients:
430g cream cheese
100g caster sugar
3 large egg
20g cake flour
270g heavy cream
1 tsp vanilla extract
1 tsp lemon juice
2 teaspoon hojicha powder
2 teaspoon matcha powder

Method:
- Cream cheese and sugar till creamy
- Add in the egg. Mix well.
- Follow by the vanilla extract and lemon juice.
- Lastly fold in the flour and heavy cream.
- Divide the mixture into 3 equal portions
- First portion is plain.
- For the matcha, add in the matcha powder and mix well
- For the hojicha, add in the hojicha powder and mix well
- Bake in a 6 in tin lie with 2 pieces of baking paper.
- Temp – 240 degree bake for 30-35mins
