PORTA X Auchentoshan Exclusive Whisky Dinner – Robertson Quay, Singapore

We recently visited PORTA at Park Hotel Clarke Quay for the revamped menu by Executive Chef Alex Phan and now we are back for PORTA X Auchentoshan exclusive 3-course whisky dinner. In this curated menu, Porta carefully selected 3 types of Auchentoshan Glaswegian Scotch expressions to specially pair with Executive Chef Alex Phan’s creative signatures.


This exclusive dinner will take place at PORTA on 14 June 2019 till 16 June 2019 at 6.30pm. Dinner is at $76++ per adult (with whisky pairing) and $58++ (without whisky pairing). Jamey Merkel, the ambassador of Auchentoshan, will be making his appearance on 14 June to share more about the triple distilled whisky.



Auchentoshan Triple Distilled Whisky

When I noticed that Auchentoshan emphasized itself as a triple distilled whisky, I wondered what’s the purpose and benefit. I know from chemistry that distillation is a process of heating and cooling to purify the liquid. However, how does triple purification helps. I did a quick read up and finally I understand. Alcohol, like coffee, has lots of different chemical component, triple distillation allows, first to concentrate the alcohol content and second to select the different components to retain or remove due to different boiling points. As a result, the whisky could have different characters and taste profile.


Porta X Auchentoshan Tasting Menu

First course, a starter of Home-smoked Trout in Thai lime and Granny Smith apple is paired with the Auchentoshan 12-Year-Old Single Malt. This malt-fermented booze is with tangy and sweet hint of mandarin, lime, caramel and cacao complemented the zesty, subtle smoky appetiser.


Working into the second course, Sous-vide tender pigeon with earthy beet and grainy quinoa. A red meat that is more gamey is coupled with a bold, intense Auchentoshan 18-Year-Old Single Malt matured in American bourbon oak. Savour notes of green tea, cedar wood, tabacco leaf and toasted almond.


End the night with Home-baked thyme cookie with blackberry compote, fresh whole blackberries and aged balsamic together with The Auchentoshan Three Wood Single Malt (American bourbon, Spanish Oloroso Sherry and lastly Pedro Ximenez Sherry casks). Sweetish and rounded finish, smooth to palate harmonized with the dessert. I was surprised to find the unusual combination of thyme, berries and aged balsamic complemented each other perfectly.
