No lack of Japanese restaurant that offers Shabu Shabu are available in Singapore such as the one offered by Hibiki Japanese Restaurant. However, not many offer Yuzu Shabu and not to mention a good one. We finally found it at Yuzutei, located along Pasir Panjang Road. Decocting the flavourful broth daily with airflown Kito Yuzu fruits and Yuzu j.uices from Tokushima Perfecture, Japan under low temperature for long period of time. Even though I am not a fan of soupy food, I enjoyed.
Looks classy, like an authentic Japanese restaurant. Homongenous tables and chairs are lined neatly in 2 rows.
Yuzutei offers a specialised menu and a handful of affordable don for lunch.
Their specialty is the Signature Yuzu Shabu even though I am not a fan of soup, I enjoyed. I could savour subtle yuzu aroma amidst the flavourful soup.
2 option to choose from. First is the Japan Shirobuta Pork ($26/pax) which comprises top grade Kyushu pork belly and collar.
Alternatively, Shin Negima-ka Nabe ($42.50/pax) that includes top grade Bluefin Fatty Tuna and Swordfish.
For both the option, Japan Mizuna Vegetable, Cabbage, Handmade Prawn Paste, Shiitake Mushroom Paste, Tofu, Japanese Fish Cake and Rice are part of the set.
If you love beef, this is a must order, A5 Hokkaido Snow Beef ($53/150g), exclusive top A5 grade with snow flakes marbling score of 10 and above. The supply is so rare till only one other Celebrity Chef Restaurant got the supply. So if you want to try this premium meat, Yuzutei is the restaurant to turn to.
After 5 to 10 minutes of boiling, remove the yuzu from the soup. Next enjoying the Shabu by cooking all the hard vegetables and Tofu. Then add the meat and mushroom paste. Finally, cook each slice of meat individually to prevent over-cooked.
A word of caution, as the tuna is very fatty, hence, after cooking, a strong intense fish-flavour (which you might describe as fishy smell) is apparent. However, when you drink it, there is an added layer of fish aroma resulting in a complex flavourful soup. You may want to cook the Bluefin Tuna Belly last, after you are done with the meat. And do remove the fish as soon as it is cooked to prevent overwhelming fish flavoured in the soup. It is akin to the durian experience.
2 dipping Shabu sauces was offered; the ponzu and a invention by Yuzutei with radish, yuzu and chilli.
Another signature item at Yuzutei is the Signature A5 Ishiyaki Hot Stone Grill Set ($45/100g, $63/150g).
Sizzling over the hot stone to leave an extremely light char on the beef. Dip it in the Yuzu Salt for some citrusy flavour note.
Lastly end the meal with dessert. First choice is the Mizu Shingen Mochi ($6.90) sat on a pool of black sugar, surrounded with 3 dips; soy powder, matcha dusting and sweet potato puree. Personal favourite is with only the black sugar.
Alternatively, enjoy the Moffle with Ice Cream in either single flavour ($4.90) or 2 flavours ($6.90). Moffle is a mochi in waffle mould. 2 flavours of ice cream to choose; Peppery Kinoko Yuzu and Matcha Black Sesame. Each has its own fan. The former is not in the usual sorbet but ice cream form with peppery hint among the fruity distinct yuzu aroma. I prefer the latter though the matcha flavour is light till most may find it was masked by the Black Sesame. There is still weak matcha fragrance releasing at the end. I think the balance could still be adjusted.
Some choices of non-alcholic drinks are light refreshing Mocktail Soda ($5.50) such as Lavender White Peach Soda and Mojito Soda. Or opt for their Signature Yuzu Smoothie ($6.50).

NAHMJ Verdict
Though Yuzutei offers a small and limited menu, all items were well-executed. Quality broth and ingredients were used in both their signature items, the Yuzu Shabu and Hot Stone Grill. Certainly value-for-money.
