After its successful inaugural launch last year, The Great Meat Feast at The Carvery, Park Hotel Alexandra is presenting the second instalment. This year, in addition to a premium range of beef, the Carvery introduces two different pork cuts.

STARTERS, HOT DISHES AND A LA MINUTE PASTA

 

Before commencing a carnivorous feast at the Carvery, guests may graze on some greens or seafood on ice with the options of: Chilled Tiger Prawns, Canadian black mussels, White clams, seasonal freshly shucked Oysters.

A variety of hot dishes make ideal counterparts to the roasts and consist of rotational selections such as Beef Bourguinon, Black bean stew with pork, Duck confit, and seafood creole. Seafood fans can indulge in the daily-changing gilled fish served, such as trout, sea bass, Atlantic cod and red snapper. A pasta station rounds out the meal with choices of pasta like – spaghetti, fusilli, linguini.

28 DAYS DRY AGED ABERDEEN ANGUS (Britain) I Striploin (Available Friday to Sunday Only)

 

The fresh beef is dry aged for 28 days to allow enzymes naturally present in the meat to break down the muscle tissue, resulting in improved texture and flavor. The refrigerator which dries aged beef is place at the entrance of restaurant. You can clearly see the aged beef in different stage.

Mayura, a national award-winning boutique beef producer, located along Southern Australia’s beautiful Limestone coast, has been raising cattle for the past 171 years and specially, full-blood wagyu since 1997. The Full-blood Wagyu tastes very juicy with a bit nutty and caramel-like flavor because of the chocolate added into the feed.

DINGLEY DELL (Britain) l Collar

 

Dingley Dell Pork is the result of the unique crossbreeding of Landrace, Red Duroc and Large White pigs. This combination has created amazingly flavor meat with a high fat marbling of about 7%. Chef twice-cooks the meat. It is first sous vide for 12 hours in a marinade of fresh apple juice, whole garlic, and herbs of thyme, sage and parsley which imbues an aromatic perfume while keeping it juicy and tender. To seal in its succulence, chef encases it in salt and bake it for 20 minutes. To serve, he cracks open the “salt shell” with the back of spoon before slicing into the beautiful pink flesh. I really appreciate the time and effort which chef has put into this delicious meat.

BANGALOW SWEET PORK (Australia) l Belly

 

Bangalow Sweet Pork is a multi-award winning meat due to it is produced under Sustainable Agriculture Practices. To make this fantastic cut, chef applies a blend of coffee and cocoa powder, paprika and oregano on the pork belly and rolls and ties it carefully, slow roasts it in the oven for one and an half hours. It turns out a great supple on the inside and crispy on the outside porchetta.

With all that red meat, it’s a must to pair with red wine. Five reds have been specially chosen to complement the roasts, at special rates from $14++ per glass or from $68++ per bottle.

 

 

DESSERT

 

The meal is not complete without something sweet. The English Trifle – this rice dessert is layered with thick custard, kirsch soaked sponge cake, and fresh berries. Other options include Spiced Apple Crumble, White rum panna cotta, Red velvet cake, Chocolate truffle cake and an assortment of fresh cut fruits.
