Taking over half the space, formerly occupied by Chef’s Noodle at HarbourFront is the flagship store of Ramen Hitoyoshi. I like to think of it that the Tonkutsu ramen served at this ramen joint is featuring the Hitoyoshi style.
Area maybe small however, they didn’t pack them too closely as such there are quite a good space between the furniture. Alternatively to the normal dinning tables, there is a bar counter with a good number of seats.
At Ramen Hitoyoshi, there are 3 flavours; Original, Garlic and Spicy. One could choose then decide if if they wanted the Tonkotsu only, with Ajitamago or with all topping.
My first attempt was the Original Tonkotsu with All Topping ($14.90) with normal taste soup and hard noodle. Overall the soup was salty. Noodle was lightly chewy but doesn’t withstand soaking in the hot broth. As such do remember to grub down the noodle fast.
Next was the Garlic with Ajitamago ($13.90). I thought I would love the garlic but to my surprise, this garlic version wasn’t as fragrant as the one I have from other Ramen outlet.
Lastly, was the Spicy with Ajitamago ($13.90) which I usually avoid but it turned out to be my favourite. In fact, the spicy brought out the best in the tonkatsu-flavoured soup.
There are option of thick and thin noodles. I would suggest thick noodles if you don’t like it soggy and for a better texture. At all my 3 visits, I was extremely please with my Ajitamago since I got the runny yolks for all orders.
At Ramen Hitoyoshi, they offer Complimentary Beansprout and Corn for diners to enjoy while waiting for their order to be served.
If you are like me, who like to have some sides besides the ramen, you could turn to the Gyoza, 5pcs ($4.90). It was as amazing as the ones at Gyoza-ya. The skin wrap was extremely thin with tasty filling.
I would skip the Prawn Mayo ($4.90). The batter though light, it wasn’t crispy.
According to the menu, they are offering some Don which will be available soon. I am keen to try them when available.
NAHMJ Verdict
All in all, NAHMJ will return to Ramen Hitoyoshi for the Spicy Tonkutsu Ramen and Gyoza.
