In conjunction with this recognition, Peony Jade @ Keppel Club launched “Sik Dao Bao Bao” Ala Carte Cantonese Dinner Buffet available from 1st July to 30th September, 2017. “Sik Dao Bao Bao” is a Cantonese phase which means eat till you are full. While Peony Jade @ Clarke Quay ran the Red Hot Chilli Crabbers Set Lunch.

The crabs are so fresh and the well-balanced tangy sauce packs in a heat that kicks in after a few moments, you will sense what we call a “body” to the sauce. The fragrance comes from the garlic and other aromatics with an underlying sweetness from the onions, a subtle acidity from the vinegar found in ketchup. It is best eaten as a dip using the fried “man-tou” (buns) provided.

First is the simple and yet sophisticated Sautéed Prawns with Superior Soya Sauce which tests the chef of the wok skill. Francis, the restaurant manager told us that the key to all successful stir frys is to prepare ingredients in advance and are close to the stove for easy access since you want to keep an eye on the wok at all times. Once that high heat is attained, the only thing you need to worry about is the lighting-fast cooking processes.

 

 

Roasted Pork Belly with Five Spice and Sea Salt is the crispest and tastiest pork belly I ever had. You enjoy it in two stages. First, when the crackling breaks in your mouth with a crunch like flaky pastry. Second, when the perfectly tender layers of fat and meat melt on your tongue, imparting delectable smoky and herby flavours.

 

 

Next recommended dish in this Sik Do Bao Bao ala carte buffet is the Steamed Chilean Sea Bass with Minced Chili & Garlic Paste. We can taste the freshness of the fish, with mild sweet red chili hint. A delicious steamed fish dish that is a very different from the usual Teochew-style.

 

 

Szechuan-style Stewed Eggplant with Minced Meat in Claypot is a highlight using a special Yu Xiang Sauce. I have looked through many Chinese recipes. The confusion possibly because of the Chinese wording “鱼香” literally translated as “fish aroma”. In fact, this is a standard sauce originally prepare for cooking of seafood but now extended to many Szechuan dishes and Hunan dishes. Some speculated that the name “鱼香” is actually “豫湘”representing the Henan and Hunan Provinces of which the sauces originates.
