Chang Sensory Trails 2017 In Singapore Featuring Bo & Dylan Held At Long Chim – Marina Bay Sands, Singapore

Consecutively for a second year, Chang Sensory Trails 2017 returns to Singapore. Earlier this year, the trails made their pit-stop for its global tour in London and San Francisco. Singapore is their third stop.

 

This non-ticketed event will make its appearance at The Promontory @ Marina Bay on 7 and 8 July with the aim of presenting fresh take on Thai Food, art and music.

 

 

Chang Sensory Trails 2017

 

Together with the Chef Bo and Chef Dylan are 12 affiliates who will make appearance at Chang Sensory Trails 2017. The couple’s Thai restaurant in Thailand, Bo.Lan ranked 19th at Asia’s 50 Best Restaurant 2017. They crossed path at David Thompson’s Nahm, the first Thai Fine dining restaurant that received a Michelin star. The duo truly believes in sustainable food practices with the aim of achieving zero-carbon footprint for restaurant by 2018. As such, at the Chang Sensory Trails 2017 expect only biodegradable serveware.

Here is a tip to best enjoy these Thai dishes. Best to pair them with Chang Beer. As such do remember to grab your bottle of icy cold beer while enjoying the Thai Food.

Besides delish food, other highlights include music. Get ready for live performances from the likes of O.K Ready, Astronauts and The Good Life Project. 

 

Aromatic Art installation, the “Herb Hill” with an estimate dimension of 5m by 5m by several metres high with iconic ingredients used in Thai cooking is also on sites for event-goers to explore them.

 

 

At The Chef Table

 

Much was said about the couple Chef, now it’s time to degust their creation. Chef Bo & Dylan presented a total of 8 dishes with 3 appetisers, 4 Mains and lastly a dessert.

 

Appetisers

Beginning with the Red Curry Wafer with Chicken & Thai Basil. Moved on to the Oysters with Traditional Seafood Sauce & Crispy Shallots. Ending with the Sesonal Fruit with Caramelised Prawns & Cashew Nuts.

Mains

Yet another harmless looking dish, the Salad with Peanut Praline Dressing which is actually fiery spicy. Though I am sure some would counter it as shiok! We love the punch of sour, savoury, sweet and spiciness all in one dish.

Kho Raat-style Curry of Minced Lamb Served with Organic Rice consists of bold flavour. One could easily mistaken it for pork as the undesired lamb flavour was completely masked by the herb and spice in the dish. Due to this dish, I have more rice than usual.

Deep-fried Fish Stir-fried with Red Curry, Long Beans & Crispy Fish Cakes is another aromatic dish with layered texture with a combination of soft fish meat and crispy fish and fish skin cum crunchy long beans. Both the Minced Lamb and Deep-fried Fish are my favourite Mains.

Finally, we have the Clear Pork Rib Soup. Nothing suggestive of fiery spiciness from its appearance. Be warn, this “innocent” looking liquid is going to burn your taste and cause you tear. The description on the menu was precise and apt, Hot & Sour Soup of Pork Ribs & Pickled Mustard Green. This was the most memorable dish as I walk away from the restaurant.

Favourite part of the meal is none other than the desserts.

At the Chef Table, Chef Bo & Dylan presented the Mock Rubies in Perfumed Jasmine Syrup and Oven Smoked Biscuits. The lightly sweetened coconut milk with distinct floral flavour cum crunchy ingredients was such a delight. The colourful ingredients result in a even more appetising dessert.

 

 

NAHMJ Verdict

 

We are sure that the Chang Sensory Trails 2017 is going to be the event of the year as Singaporean loves their Thai food so much and we are confident it will be a success. With 12 established and famous Thai restaurants gathered together at the same event and music and arts, this is certainly a flawless formula attracting all foodies and not to be missed by in particular Thai Food lovers.
