As a fan of pizza and pasta, I was excited to hear that O Mamma Mia Sapore Italian has arrived in Singapore! They are an Italian fast-service chain that promises to serve authentic Italian comfort food at affordable prices  For the first time in 45 years, they are bringing their tasty Italian food out of Spain and into Asia. Fortunately for us, Singapore is their first stop!

 

45 years ago, Sergio Bracci ventured into Spain, started his first pizzeria O Mamma Mia with the hope to bring the warm experience of having a mother’s home cooked Italian meal to everyone. In 1972, he started O Mamma Mia Sapore Italiano as a fast-service chain. Despite the difference in concept, the food quality remains the same.

The thing that makes O Mamma Mia Sapore Italiano stand out is their insistence on authenticity and consistency regardless of where they are. Mauro Bracci, son of Sergio Bracci and brand manager of O Mamma Mia shared that to achieve this objective, the pizza dough used in all their outlets are made in Italy, then shipped overseas regularly.

In Italy, the pizza dough are made using premium “00” bread flour, extra virgin olive oil and their own sourdough starter. Then allowed a slow leavening over 24 hours. After that, they are hand flattened and par-cooked in a special pizza oven at 400 degrees Celsius to create a well textured and firm base. To avoid adding any preservatives to the dough, O Mamma Mia employs a state-of-the-art blast freezing tunnel machine to quickly freeze the dough. With this, we are guaranteed pizzas that taste (almost) the same as the freshly-made dough.

In Singapore, there are 15 varieties of pizzas to choose from, including the chef’s recommendation, 5 Terre and a dessert pizza, Pizza Nutella (S$3.50 Nett per slice). I know you will ask, what about Hawaiian? Unfortunately, Hawaiian pizza is apparently not an authentic Italian pizza flavor.

 

 

Meatless Pizza

Among the 7 flavors I tried, my favourite is the 5 Terre (S$4.20 per slice). It is a meatless pizza made of home-made pesto sauce and fresh Boletus mushrooms, tomatoes, Parmesan and Mozzarella cheese from Italy. I absolutely adore the pesto sauce in this pizza! This is also the crowd favorite among my fellow diners. For your information, the same pesto sauce is also available for pastas.

Other meatless pizzas you can try are the 5 Formaggi (S$3.90 Nett per slice) and Marco Polo (S$3.90 Nett per slice). 5 Formaggi is an Italian classic that is made for cheese lovers. As the name suggests, it consists of 5 cheeses- Mozzarella, Parmesan, Gorgonzola, Provolone and a secret blended cheese. Although 5 types of cheeses are used, this pizza is not overwhelming in richness or saltiness.

Marco Polo is the fancy name given to a zucchini pizza on a mozzarella cheese and whipped cream base. This is also enjoyable since the whipped cream provides a nice fluffy feel when you bite into the pizza.

 

Meat Pizza

If you prefer something with meats, you can go for the Rucula Speck Provolone (S$4.20 Nett per slice) or Prosciutto (S$3.90 Nett per slice).

Personally I prefer the Prosciutto over Rucula Speck Provolone. While both use dry-cured hams, the ham on Rucula is saltier and drier so it does not suit my palate. I do enjoy the provolone (Italian soft smoked cheese) in Rucula though. By the way, if you are dining in, do add some spicy oil (provided in the shop) to enhance these two ham pizzas.

For tuna fans, the tomato based Tonnara E Cipolla (S$3.90 Nett per slice), which uses only premium canned tuna from Italy will be a great option. This pizza is another of my favorite because the tangy homemade tomato sauce pairs very well all the ingredients.

 

All pizzas are sold by slices only and are available for both takeaway and dine-in.

 

 

O Mamma Mia Sapore Italiano Pasta

 

Five types of pastas- Tagliatelle (long, flat ribbon-shaped pasta), Strozzapreti (elongated twisted-shaped pasta), Gnocchi (elongated potato balls), Garganelli (tubular-shaped pasta) and Bigoli (long, tube-shaped pasta) are served at O Mamma Mia Sapore Italiano. All are made in Italy, blast frozen then sent overseas. When pastas are made this way, they are considered fresh pastas. You can definitely taste the freshness in terms of texture.

You can mix and match with the homemade sauces that are made from scratch using fresh ingredients locally sourced – Bolognese, Arrabbiata, Pesto, 4 Cheese and Boletus E Tartufo.

I tried 3 of them- Garganelli, Gnocchi and Strozzappreti with 3 sauces- Arrabbiata, 4 Cheese and Pesto. I couldn’t decide my favorite between Garganelli with Arrabbiata (S$7.90 Nett) and Gnocchi with 4 Cheese (S$8.20 Nett). Based on description alone, I choose Arrabbiata because I am a spicy lover and a tomato-sauce supporter. And I have to say that their Arrabbiata didn’t disappoint!

But surprisingly, the 4 Cheese Gnocchi (S$8.20 Nett) was just as impressive! Since 5 Formaggi and 4 Cheese share about the same ingredients (with one less ingredient- mozzarella), I didn’t think taste will differ much. Alas! I was wrong! This totally blew me away! It pairs really well with the chewy soft kueh-like texture gnocchi.

I tried the Strozzappreti with Pesto (S$8.20 Nett) with high expectations since I love their 5-Terre. But contrary to the case of the Cheese Pizza vs Pasta, this round, the pizza fared better. The same pesto-sauce is used (I verified this). The only explanation I have is, maybe the freshly grated Parmesan cheese added interfered with the pesto’s favor. I may be wrong.

 

 

NAHMJ Verdict

 

O Mamma Mia Sapore Italiano is a no-fuss quick-service kiosk where you can get a taste of Italy without paying big bucks. And I am going to order Pesto Pizza and Cheese Pasta at O Mamma Mia Sapore Italiano in my coming visit.
