Machida-Shoten Ramen is the ramen restaurant at Japan Food Town. At Machida-Shoten, the ramen served is known as lekei which translates directly to mean “house-type”, from the kanji “家”. As such, the noodles are cooked to diners’ preference.
The restaurant has the typical ramen house ambience. And what I like best is the bright lighting.
At Machida-Shoten, 3 types of broth are available; Ton-kotsu with Shoyu, Ton-kotsu with Sio and Ton-kotsu with Spicy Miso. Each broth type comes with different ingredients for selection such as with Seasoned egg, Cha-Shu, Negi (Leek) and the special that has the seasoned egg, cha-shu and seweed.
One advantage dinning at Machida-Shoten is that diners can customise their bowl of ramen. First, decide the noodle texture (firm, regular or soft). Subsequently, select the flavour of soup (strong, regular, light, very light). Lastly, choose the amount of chicken oil (rich, regular, less, no oil).
I went for the Tonk-kotsu ShoYu Special Ramen ($17). Though broth was rich and flavourful, it was extremely salty too. This is so for the high salt tolerance me too.
Tonk-kotsu Sio Ramen With Flavoured Egg ($16) is my preferred broth base. The rich flavour pork broth with the black garlic complemented each other perfectly. And somehow, the sweetness of black garlic masked the briny stock. Hence it has a better balance.
Though the ramen noodle taste eggy and flavourful with a silky texture, I didn’t enjoy because the overall taste reminds me of the local yellow noodles. The ramen is strong in what I would term, alkaline taste which I detest.
I like the Seasoned Egg since the yolk is considerably runny and the white was soaked with the seasoning flavour.
The Cha Shu melt in the mouth. The best part, at least, this is true for the one in my bowl, has little fat which I appreciate.
At Machida-Shoten, they serve several side dishes such as the crowd-pleaser, Gyoza ($6.80 – $7.80). There are also fried rice ($8), Buns with various fillings ($4.50 – $5.50), salad, bamboo shoots ($7.60) and even fried chicken ($6.50).
NAHMJ Verdict
Machida-Shoten Ramen is for the high salt tolerance. Though flavourful overall taste profile is in the bowl of hot-pipping ramen, it isn’t for everyone.
