Roxy Laksa established since 1952 originated outside Roxy Theatre is now at Timber+. Many might know about Roxy Laksa. Equally many may not hear or unsure about them too. Started by Lim Kiok Seng, outside Roxy Theatre on a humble cart is now passed to the third generation. And it is Mike Lim Swee Heng (better known as Uncle Mike) who have inherited this culinary skill.
Third-generation owner of Roxy Laksa, Uncle Mike, partnered lawyer-turned-chef Willin Low to succeed the closely guarded 64-year-old family recipe at its new home at Timbre+.
Till today, Uncle Mike continues to prepare all the ingredients personally. This is to ensure freshness and best quality. While preparing the Laksa, Uncle Mike meticulously taking care of the details at each step. Through the years, Uncle Mike has perfect his skill enabling him to prepare a well-balance laksa gravy.
Roxy Laksa is a light version but certainly one with great character. The laksa spice blend and coconut robust enough for savour. But some may lament about the missing tau pok and the cockles. But I don’t missed them anyway.
Even though I am not a laksa fan and have rich palate, I truly enjoy Roxy Laksa.
NAHMJ Verdict
Roxy Laksa may not be as rich as others but diners could definitely savour the flavours and the passion of Uncle Mike dedication to the traditional culinary trade.
