Tiong Bahru Bakery Diner New Menu By Chef Paul Albert – City Hall, Singapore

Tiong Bahru Bakery Diner is an all-day dining extension at its Funan and Raffles City outlets. The cafe is introducing an all-day breakfast “diner” spin-off. We visited the Funan outlet and they are located at the same floor as Godmama Peranakan Restaurant.

A new chef, Paul Albert, a young bistronomy chef who’s gastronomy training and working include some of Paris’ most exciting cafes and bakeries and even Michelin-starred restaurant. He is the man behind the well-received menu.

Highlight of Tiong Bahru Bakery Diner Menu

A rarely used ingredient Mung Bean, except in Chinese dessert, Chef Albert boldy uses it in the Chaote Kimchi & Mung Bean Salad ($18).

This is one of the rare sous vide dish that I enjoyed, Hot Chicken Salad & Caramelised Pumpkin ($20). I don’t usually like the texture of sous vide meat. This is close to the usual method of cooking. Importantly, I have soft-spot for pumpkin. The pomelo salad is worth a mention.

Using five local vegetables; Chinese spinach, Bok Choy, Shanghai Green, Chye Sim and Lady’s Finger in this Super Green Warm Soup ($16). This soup is highly recommended for those who don’t like their green.

Wholesome Miso Whole Wheat Spaghetti with Broccolini ($19) is tasty even though it is a vegetarian dish.

If you are looking for a meat dish, I recommend Pulled Pork Creamy Risoni Pasta ($22).

All my favourite ingredients are in the Portobello, Avocado & Hummus Black Sandwich ($19), how could I refuse it.

I am not a fan of sourdough, I am sure I won’t order the 100% Sourdough Waffle, Savoury ($23). It is made from 158 years old mother dough starter and the result is lots of complex flavour. I could easily savour banana and green apple scent in the waffle.

True to its name, Fluffy Brown Butter Pancake, Sweet ($21) and is crowned with generous amount of mango and caramelised nuts. Don’t forget to enjoy each mouthful of pancake with the lemongrass infused Chantilly Cream and the mint leave.

NAHMJ Verdict

I am filled with awe for Tiong Bahru Bakery Diner New Menu. Lots of vegetarian dishes are this delicious. Who say healthy eating can’t be delicious and Chef Albert will prove you wrong.
